how about this weather we're having... i'm not too impressed... oh well, there is promise of warmth sometime this week, (maybe even tomorrow) so i'm keeping my fingers crossed!
as far as the weekend goes, i really dont have much planned, or anything that exciting going on. sam is in philly this weekend visiting his family, and my brother is back home in guelph, so its just me in the apartment. perhaps i should take the opportunity to clean it up a lil bit, our fridge needs a good cleaning, so maybe i'll get around to it. other than that, i guess ill just continue working on my papers, i'm hoping to get them mostly done in the next week or so, and get a head start on exam notes. i have so many things to figure out between now and april 25th, when we leave for our trip, so i'm trying to get everything organized and set deadlines for myself to keep everything on track. we'll see how that goes...
since i'm only cooking dinner for myself tonight, i've decided to make my recent favourite roasted veggie dish. i made this up a couple weeks ago, and i've had it quite a number of times since. probably because it's easy, but really full of flavour!
miso roasted veggies.
so you can really make this with any veggies you want. i usually go with carrots, cauliflower, cremini mushrooms, zucchini, red onion, beets and sometimes kale. i chop up these veggies into medium sized chunks.
next i take a tablespoon of balsamic vinegar, and mix it with a tablespoon in miso paste. if the mix is a little thick, i add a teaspoon of water.
toss the veggies with the miso dressing, and transfer them to a roasting pan. i set the temperature to 350 degrees, and let the veggies roast for about 45 minutes. you can keep them in longer or shorter, depending on how you like them!
i often eat these veggies with fish, or like today, a hardboiled egg.
today i also got lucky and found strawberries and pineapples on sale in kensington, so i picked some up for dessert :)
and that was my solo dinner tonight.
