gluten free anzac cookies.





sooo i'm confused by this weather. yes, its not freezing outside. but the constant change between snow and rain, and then the odd perfect (even warmish) day just makes going outside a tad unpredictable.yesterday was exactly that kind of day. raining on my way to the gym, snowing on my way back, completely calm, even sunny on my way to pamemar, and extremely snowy on my walk home. 

that walk in the snow was not pleasant, but at least i came up with an excellent project for the night - cookies!



i've had my eye on this recipe for a while. this is a gluten free version of the australian anzac cookie, and as my brother informed me "they don't taste gluten free at all!" they came out so well, and are one of the easiest cookies i've ever made!


here is the recipe for these cookies, i altered it a little bit from the original (which you can check out in the link below)


i encourage anyone to make these, even if you can eat gluten. i promise you wont miss it in these cookies!!!


gluten free anzac cookies.(adapted from girl cooks world)

- 1 cup gluten-free oats
- 1/3 cup oat flour
- 1/3 cup brown rice flour
- 1/3 cup potato starch
- 1 cup dried, unsweetened coconut
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 teaspoon baking soda
- 1 teaspoon xanthan gum
- 1/2 cup butter (i used margarine, worked perfectly)
- 1 teaspoon vanilla
- 2 Tablespoons honey
- 2 Tablespoons boiling water 


preheat the oven to 350 degrees and grease a baking sheet or line with parchment paper. 

mix together the oats, coconut, brown rice flour, oat flour, potato starch, sugar, brown sugar, baking soda and xantham gum in a large bowl and stir to combine.  

in a small saucepan, melt the butter and honey together.  add the boiling water and stir to combine.  pour into the oat mixture and mix well.

drop by teaspoon onto prepared baking sheet and bake for about 12 minutes, or until lightly browned. Remove from oven and allow the cookies to cool on the baking sheet before removing them onto a cooling rack.

makes about 30 cookies.
