best ever pumpkin cinnamon rolls.




looking at these pictures is making me want one of these rolls sooooo bad! i must say, these have got to be the best cinnamon rolls i've ever made, and the addition of the pumpkin makes them extra special.

the recipe i used comes from just eat love, but i made a few minor changes with the ingredients i used.

pumpkin cinnamon rolls with coconut icing

dough: 

- 3/4 tapioca starch
- 1/4buckwheat flour
- 1/2 rice flour
- 1/3 potato flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tsp xanthan gum
- 1/2 brown sugar
- 3/4 cup pumpkin puree
- 2 tbsp coconut oil
- 2 tsp vanilla extract
- 1/3 cup almond milk
- 2 tbsp yeast

cinnamon filling

- 2 tbsp vegan butter
- 1/4 cup cinnamon
- 1/2 cup brown sugar

coconut icing

- 2 tbsp coconut milk, creamy part at the top
- 3/4 icing sugar

add 1 tbsp of sugar and the yeast to a bowl of warm almond milk. let the mixture sit for a couple minutes to proof. once the mixture is frothy, you know it is ready to use.

mix the flours, baking powder, baking soda and xanthan gun. add the sugar and salt.

once the yeast is proofed, add the oil, vanilla, and pumpkin puree. stir in the flour till a sticky dough forms. 

turn the dough onto plastic wrap and roll it into a rectangle shape. the dough should be about 3/4 of an inch thick. once the dough is rolled out, spread the butter and sprinkle the sugar and cinnamon over the entire surface of the dough.

now it is time to roll the dough. taking a piece of the platic wrap, roll the dough in a log shape. cut the pieces about 1 1/2 inches thick, and place them in a buttered baking pan.

cover the rolls and let them sit in a warm place for an hour. once they have risen, pop them in an oven at 350 degrees fahrenheit, and bake them for 20-25 minutes. you want them to be lightly browned.

while the rolls are still warm, glaze them with the coconut frosting and dig in!!!!

not only are these gluten free, but vegan as well! the perfect snack for the chilly fall weather we've been having these past few days.
