today for dinner i was lucky to have my mums homemade pasta sauce on hand to eat with my tofu noodles. now, i usually don't eat pasta. not a fan of the typical sauces you buy or have at restaurants.
but
my mum has the most amazing recipe for the simplest sauce. not fancy at all. just tomatoes, garlic, chili peppers, salt, pepper, and basil leaves.
sauce with mah name on it.

- olive oil
- 3 cloves garlic
- 2 cans of whole tomatoes, minced
- pinch hot chili pepper
- pinch of salt
- pinch of pepper
- handfull of roughly chopped basil leaves
you begin by heating up the oil in a large pan. Toss the minced garlic, and saute for a minute or so on medium heat. You don't want it to burn!
once the garlic is golden brown, add the two cans of tomatoes, include all the juice. using a potato masher, squash the tomatoes a little bit.
add the salt, pepper, chili pepper.
now you turn down the heat to a low temperature, and let the sauce simmer for about 2 1/2 hours to 3. remember to stir it once in a while!
(this seems like a long time. but you want them to really cook down and thicken)
once you have the desired consistency. add the basil leaves, and leave on for another 5 min. always taste the sauce and adjust the spices to your liking.
and your sauce is ready!!! plain. simple. delicious.
oh, i also had a side of kale and mushrooms with soy sauce. mmm.
